Environmental assessment of the supply chain, with a special focus on local production
Abstract
By defining the problems of today’s food system – including food security, healthy eating, affordability and its social and environmental impacts – and exploring its externalities, this paper describes the real cost at which healthy food gets to our tables. This paper describes methods for measuring the environmental impact of the food consumed. Carbon footprint calculation
methods, including the methodology and steps of the PAS 2050 standard, are presented through a case study.
